Jimmy Fallon's Crock-Pot Chili!

I somehow ended up watching Martha Stewart today and Jimmy made chili....so I went to the store and bought everything needed to make the recipe. I have never made chili before...It looked very simple, so....giving it a try.

Martha Stewart/Jimmy's Recipe

This easy Crock-Pot chili recipe is courtesy of comedian Jimmy Fallon.

Ingredients

Serves 8

• 2 tablespoons olive oil
• 3 1/2 pounds ground chuck beef, ground for chili
• Coarse salt and freshly ground pepper
• 1 large white onion, chopped
• 3 cloves garlic, finely chopped
• 1/2 habanero chile, seeded and very finely chopped
• 1/4 cup chile powder
• 1 tablespoon dried oregano
• 1 1/2 teaspoons ground cumin
• 1/4 teaspoon cayenne pepper
• 2 (28-ounce) cans whole tomatoes, coarsely chopped with their juices
• 1/3 cup chopped fresh cilantro, plus more for serving
• 1 (12-ounce) bottle amber beer
• 2 (15-ounce) cans kidney beans, drained and rinsed
• Tortilla chips, for serving
• Shredded cheddar cheese, for serving
• Chopped tomatoes, for serving
• Sour cream, for serving
• Lime wedges, for serving

Directions

1. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Working in batches if necessary, add beef and cook until no longer pink, about 3 minutes. Season with salt and pepper; drain in a colander, discarding fat, and set aside.
2. Add remaining tablespoon olive oil to skillet and reduce heat to medium. Add onions, garlic, and habanero; season with salt. Cook until translucent, about 5 minutes.
3. In a 6-quart Crock-Pot, combine beef, onion mixture, chile powder, oregano, cumin, and cayenne pepper; stir to combine. Add tomatoes, cilantro, and beer; cover and cook on high, stirring occasionally, for 5 hours.
4. Add kidney beans and season with salt and pepper. Continue to cook, uncovered, until thickened, about 30 minutes. Garnish with cilantro and serve with desired toppings.

This week was really good...

My son got his green belt in karate,
we took some great video and pictures

My mom had a health scare
was notified this week that all is good

The "Umbrella" singer was left with facial injuries following an argument on Sunday in which her boyfriend reportedly punched her in the face, causing swelling to her forehead and a split lip, as well as biting her on the arm.Rihanna refused treatment at the scene of the accident - which Chris fled from - but police took pictures which have been described as "devastating proof of abuse."A source said: "She looked like a martial arts fighter. Her injuries were bad."It is now believed it was not Rihanna who called police, but a passer-by who heard shouting coming from 19-year-old Chris' car.The altercation happened after the pair were seen arguing at a pre-Grammy awards party in California on Saturday.A source said: "Inside the party they were very lovey-dovey, but later on they were arguing.""Rihanna is now doing a lot of soul searching over whether their relationship can last. Only time will tell."The couple were also seen having a "scary" fight on Friday.A witness said: "I saw Chris Brown and Rihanna fighting at the Verizon party at Boulevard 3 nightclub on Friday night.""They were in this room and they were just screaming at each other, totally cussing each other out. They were screaming 'F**k you!' 'No, f**k you!' at each other, back and forth. They were right in each other's face. Law enforcement sources tell TMZ Rihanna's injuries were severe -- two "huge contusions" which swelled up on both sides of her forehead. We're told she also suffered "a bloody lip and nose."


One of the law enforcement people put it this way -- the contusions "look like an MMA fighter or something ... [It] looked like she was growing devil's horns."

We've also heard that Rihanna may have suffered bite wounds on one of her legs and arms, however, one source close to the situation tells us he doubts that is the case.

Chris Brown has been booked on a felony criminal threats charge. If the D.A. files the case, domestic violence charges could be added.

Today I was randomly thinking (which can be dangerous)
...how did we survive before microwaves?

I remember my mom getting her first microwave...I was about 13 years old.
I watched amazed as she scrambled an egg in a bowl with a dab of butter and nuked it.
That amazing machine heated many a burrito, baked potato, you name it...we nuked it!



With the way schedules are in my home...a grown daughter of 19 in college, a teen daughter of 15 in high school, a 9 year old son in elementary school...and can't leave out the husband
(I will spare him and won't post his age)
I really don't know how we would cope without a microwave.
I honestly do think we would lose weight...without that convenient heat up, we would most likely pass on at least some things we would have eaten.
I also can't imagine how we would survive without one....
everyone is on the run all day long.

Microwaves are pretty darn incredible....
